Chiang Mai Knife making Cooking class

Che is an expert Thai Knife Maker, specializing in functional chef knives. He is one of the talented knife maker's in Thailand that use modern blacksmithing techniques found around the world. From expert heat treat that create natural Hamon patterns, to advance handle & blade work, Che will help you craft a lasting experience through your very own Chef Knife!

This is actually a unique homestay experience, with local Thai Knife Maker, Che is opening up his family home if you need accommodation. Stay with locals, as Che has 2-3 single beds indoors with fans, or you can opt to stay in an open cabin style house with mosquito netting & Thai mats. Very intimate setting, as you fall asleep to the sounds of frogs, geckos and birds singing in the night & morning.

Che's family are more than accommodating and a pleasure to meet from our personal experience. We highly recommend this very unique experience if visiting Chiang Mai, Thailand.

Che's interests includes cooking, in which he needed functional knives to prep his food with so he learned the art of blacksmithing. He loves coffee and making his own blends, so feel free to bring your own and share! Che performs in blade cutting competitions throughout Thailand, and is part of a tight-knit community of knife makers that learn and grow from their group experiences. Making knives is a hobby for Che, and it is also a lifestyle that provides tools for his family to use in everyday life.

 WA GYUTO CHEF KNIFE (210mm)
  • The main Chef Knife covered in this class is the tried and trusted Wa Gyuto Japanese Style Chef Knife (pictured) with a rough finish and handle. If you wish to craft a different style or length chef knife, or knife style altogether, it is at the discretion of the Knife Maker & possibly at an additional cost. We are offering a style that we are confident will only take 2-3 days, and while learn advance craftsmanship, any additional deviations from our lesson plan will require additional fees/time. Basically, work it out with the maker in person after purchasing this class if you wish to customize based on your desires.
CLASS LENGTH
  • With hard work and determination, it should only take you 2 days to complete a knife, or max 3 days to finalize everything, depending on the mood. Very casual relaxed atmosphere, no pressure but there is the onus on client to work and finish the blade in a timely manner. If you require more time, please work it out with the blacksmith, or you can take your knife with learned experience home to finish. This is KnifeSurfer, not CouchSurfer.

  • We have set the limit to students per class to 2. This ensures that you have direct access to 1:1 coaching, as well as use of all tools needed without delay.
  • If you wish to purchase in pairs, please feel free. For class sizes above 2 guests, please let us know.
  • Families are welcome! Any bystanders are more than welcome to watch or visit. Please give us advance notice if you are travelling with guests and require more room if staying at the homestay onsite. Space is limited, but it's a fair size property (3 single beds + open walled cabin)

  • Closer to Grand Canyon Waterpark (8 minutes away)
  • Plenty of Hotels & Hostels close by if you wish for air conditioned accommodation
NOT INCLUDED IN CLASS:

FOOD - While Che is opening up his home for guests, and will gladly provide some meals without asking for compensation, it is recommended that you either go shopping at a local market for food, or provide some baht for them to purchase food to cook with. Che loves to grill & BBQ, so feel free to chip in on cooking duties & supplies. It's more of a communal atmosphere than a catered service, so feel free to explore the area and bring back some delicious treats, food & drinks to share. (We gave Che 500 baht for each meal for 2 people, and he cooked us some delicious local Thai food & BBQ, and beer too!)

TRANSPORTATION - We cannot guarantee transportation to and from Che's location. We can try to arrange, but a taxi/Grab is preferred for ease of use.

ENGLISH TRANSLATION - Che's English is limited, but he has a friendly demeanour and he coaches through example and basic english. It was easy to watch and learn, then get guidance along the way.

Please purchase with confidence.

Our website is 100% verified through Shopify Buyer Protection and all transaction and customer info is securely encrypted with the latest technology.

  • OUR REFUND POLICY

We gladly accept refunds within 24-48 hours after purchase. A little buyer's remorse is ok! Once 48 hours have passed from the point of purchase, your money has been securely transferred and we will initiate the custom order. At this point, there will be no refunds granted on handmade custom orders, or any item that has already been shipped.

Once 48 hours have passed, we will start the handmade process of creating your lifetime blade. This includes purchasing domestic & imported materials, paying labour costs from our skilled blacksmiths & craftsmen and completing your item according to our current queue of placed orders.

Once the handmade process has begun, we cannot offer a refund, as your money will be put towards the creation of your custom handmade item.

As an aside, we have had a few orders where a client has agreed to a 3-6 month manufacturing time, only to back out in the final hour. This leaves us out of pocket and our talented workers not adequately compensated.  As such, we have a strict No Refund Policy after 48 hours from point of purchase.

    • OUR RETURN POLICY
    1. Due to the custom nature of our products, we do not accept returns of any kind. Please purchase with confidence, that you will receive a lifetime product, handmade specifically for your order
Please see our "Maker's Lifetime Guarantee" for more information
    • Maker's Lifetime Guarantee ensures that any defects on structural integrity will be replaced, free of charge, provided the maker is alive & well.

      1. Limited to Handmade Custom orders. Excludes mass manufactured items (Shopro/Ironclad axes, Tshirts/Apparel)
      2. Excludes abuse/over-usage depending on the situation
      3. If you're custom wooden handle breaks on a handmade axe for example, we will gladly replace the wooden handle and rehang the head for you. Our steel is designed to last a lifetime, but in the event of an improperly hardened steel, we will replace that as well.
      4. Shipping costs are kindly asked to be covered by the client.
      5. Chipped blade edges and dull knives can be returned for a re-sharpen/re-profile at a nominal cost to cover labour expenses.
      6. Limited to Maker Availability and subject to current wait times & queues

      1. Shipping Rates:
      • Our shipping rates are carefully selected and appropriately marked on checkout. Please select the desired expense + corresponding shipping time upon checkout.
      • Our Manufactured items will ship faster than our handmade items. All orders have a 1-2 week processing time from point of purchase.
      • Once shipped, we are not responsible for lost or stolen goods. We can purchase insurance for an additional cost, and we provide tracking number on all our orders. We ship with Confidence using Canada Post & Thailand Post, over 600 items shipped with confidence and quality assurance
      1. Shipping Times:
      • For a higher expense, we can ship express 2-3 days, or our cheapest option takes 2-3 months. Most ready to ship items will take 7-21 days, with delays seen up to 4-6 weeks. • IF you purchase any express option (7 days for example), that does not ensure the item will arrive 7 days from point of purchase. Please allow 1-2 days for payment processing +7-14 days for item processing, or more depending on the item/maker/current queue & Backlog times
      1. Current Queue Times & Backlog
      • Depending on the item, maker and current wait time, all items are subject to varying queue times. We aim to finish all custom orders within 2-6 weeks. We do experience the occasional delay from 1-6 months, depending on the custom order. In most extreme cases, a handful of orders have taken 6 months - 1 year to complete, pending postal services and delays from our makers.
      • Please check in with us if you are on a time constraint (purchasing as a gift) or if you need your item within a certain time frame. We are open for communication, and will try our best to communicate all wait times on any of our items.
      • Purchasing from Siam Blades is entering a contract with us that we are obliged to fulfill. We are working with many various Thai craftsmen that we have trusted over the years, as well as completing the work ourselves. We have always fulfilled every order that is commissioned by us, but our current backlog is subject to time of year, popularity of maker & current queue times. Some makers aren't as busy as others, while other makers are busy but have a reputable team in place to complete orders in a timely fashion. We strive to complete all orders in a timely fashion, pending life situations, weather and conditions out of our control (import of materials being delayed, postal service delays, national holidays, extreme weather, rain/heat).
      • We are a family run business, and we work with local rural maker's throughout Thailand to create sustainable jobs and economy for local villages. We strive to honour your purchase by completing it in a timely fashion, or letting you know when to realistically expect receiving your order.
